Lentils are grown in Western Canada. A wide range of lentil types and sizes are grown and are available with different seed coat and cotyledon colours. Canadian lentil varieties are available with seed coat colours that range from clear, green, brown, grey and mottled purple and black. Cotyledons can be yellow, red or green. The two main types of lentils produced in Canada are green lentils with yellow cotyledon and red lentils with red cotyledon. Other types of lentils produced in Canada include Spanish brown and French green. The size of lentils produced in Canada range from 3.5 mm to over 7 mm.
